Glass Noodles Soup

It's made with ground chicken, dried shrimp, tofu skin, dried wood ear mushrooms, banana flowers, onion, scallion, coriander, garlic, water, olive oil, oyster sauce, soy sauce, fish sauce, sugar, salt, ground black pepper, and chicken soup base mix.

Ingredients
  

  • 500 g ground chicken
  • 150 g dried glass noodles
  • 30 g dried shrimp
  • 50 g dried tofu skin
  • 50 g dried banana flower
  • 15 g dried wood ear mushroom
  • 5 cloves garlic
  • 3 stalks green onion
  • 1 large onion
  • 1 tbsp olive oil
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp chicken soup base mix
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 2 litres water
  • 1 package coriander ( for topping )

Method
 

Ingredients that needs to be prepared before cooking:
  1. Green onion: cut into 1/2 inch long. Separate the white and green parts.
  2. Onion: thinly slice.
  3. Coriander: cut into 2 inches long.
  4. Dried banana Flower: soak in water for 30 minutes, and rinse well then tie.
  5. Garlic: finely mince the garlic.
  6. Dried wood ear mushroom: soak in water for 30 minutes, rinse and drain well.
  7. Dried tofu skin: soak in water for 30 minutes, rinse well and cut into 1 inch long.
  8. Glass noodles: soak in water for 30 minutes and drain well.
  9. Dried shrimp: soak in water for 30 minutes and rinse well under tab water.
Cooking:
  1. In a large pot over medium heat, add olive oil and minced garlic, stir until fragrant. Then add ground chicken, stir.
  2. Add oyster sauce, soy sauce, fish sauce, sugar, chicken soup base mix, ground black pepper, salt, stir to combine.
  3. Add soaked dried shrimp, wood ear mushroom, banana flower, tofu skin, green onion (white part), glass noodles, stir to combine.
  4. Then add water, stir and bring to a boil. Skim off the foam to make clear broth.
  5. Once it's boiling, add thinly sliced onion and green onion (green part), then stir to combine. When it starts boiling, turn the heat off and it's ready to serve.
