Method
Ingredients that needs to be prepared before cooking:
- Green onion: cut into 1/2 inch long. Separate the white and green parts.
- Onion: thinly slice.
- Coriander: cut into 2 inches long.
- Dried banana Flower: soak in water for 30 minutes, and rinse well then tie.
- Garlic: finely mince the garlic.
- Dried wood ear mushroom: soak in water for 30 minutes, rinse and drain well.
- Dried tofu skin: soak in water for 30 minutes, rinse well and cut into 1 inch long.
- Glass noodles: soak in water for 30 minutes and drain well.
- Dried shrimp: soak in water for 30 minutes and rinse well under tab water.
Cooking:
- In a large pot over medium heat, add olive oil and minced garlic, stir until fragrant. Then add ground chicken, stir.
- Add oyster sauce, soy sauce, fish sauce, sugar, chicken soup base mix, ground black pepper, salt, stir to combine.
- Add soaked dried shrimp, wood ear mushroom, banana flower, tofu skin, green onion (white part), glass noodles, stir to combine.
- Then add water, stir and bring to a boil. Skim off the foam to make clear broth.
- Once it's boiling, add thinly sliced onion and green onion (green part), then stir to combine. When it starts boiling, turn the heat off and it's ready to serve.
