Tirk Kroeung - Cambodian Fish Dipping Sauce

Fish Dipping Sauce or Tirk Kroeung is a very well-known dish in Cambodia. It is made with a fish base, fermented fish (prahok), garlic, green onion, fish sauce, sugar, salt, and chicken soup base mix. It serves with cooked or fresh raw vegetables.

Ingredients
  

  • 600 g basa fillets
  • 750 ml water
  • 3 large cloves of garlic
  • 40 g fermented fish (prahok, prohok)
  • 1/2 tbsp fish sauce
  • 1 tsp chicken soup base mix
  • 1/4 tsp salt
  • 1/2 tsp sugar
  • 2 stalks of green onion (only green part)

Method
 

  1. Place a medium pot on medium-high heat and bring 3 cups of water to a boil.
  2. Add 3 large cloves of crushed garlic.
  3. When the water begins to boil, add the basa fillets and continue cooking until the water returns to a boil.
  4. Add fish sauce, salt, sugar, chicken soup base mix, and put the fermented fish in a strainer and place it into the boiling broth to melt it.
  5. Skim off the foam for having a clear broth.
  6. Once it starts boiling, take the fish out of the broth, and start pounding the fish but not too fine.
  7. Then put the fish back into the broth that is still hot.
  8. Add sliced green onion and stir to combine.
  9. Serve with raw or cooked vegetables as desired.
  10. This can be served with or without rice. The flavour can be adjusted as needed.
