Banana Fritters or Fried banana is a perfect afternoon snack made with medium-ripe bananas or plantains. The banana must be wrapped in thick plastic and flattened. Coat it with the batter mixture, deep-fry until golden, then coat it again and deep-fry once more until it is crispy golden brown. The creamy texture from the coconut milk, grated coconut, and sesame seeds bring the flavour so delectable.

Combine rice flour, all-purpose flour, corn starch, baking powder, sugar, salt, sesame seeds, grated coconut, water, and coconut milk, mix them all well and leave for 15 minutes while preparing the bananas.

Begin by peeling the banana skin, laying it on the plastic wrap, and rolling for a few times, then using a butcher knife to flatten it. This process is always done while ready to fry.

After flattening the banana, drop it into the batter mixture, thoroughly coated, and then carefully drop it into the hot oil. On medium-high heat, heat the oil until it reaches the temperature of 320ºF – 340ºF.

Deep fry until lightly brown. Then place it in the batter for re-coating one more time and gently drop it back in the hot oil. Deep fry until golden brown color.

Serving!
Place them on the cooling rack and serve immediately. Enjoy!

- A bunch Banana (medium ripe)
- 80g - Rice flour
- 30g | 3 tablespoons All-purpose flour
- 1 tablespoon Corn starch
- 4g | 1/2 tablespoon Baking powder
- 20g | 1 1/2 tablespoons Sugar
- 1/4 teaspoon Salt
- 5g | 1/2 tablespoon Sesame seeds
- 50g Grated coconut
- 100ml Water
- 100ml Coconut milk
- 5 cups Vegetable oil

- Step 1
- First, in a large mixing bowl, combine rice flour, all-purpose flour, corn starch, baking powder, sugar, salt, sesame seeds, grated coconut, water, and coconut milk, mix well and let it rest for 15 minutes.
- Step 2
- Preparing banana, peel and then place it on the plastic wrap and roll for 2-3 rolls, then use the large flat knife to press down but not too firm.
- Step 3
- On medium-high heat, heat the oil until it reaches the temperature of 320ºF – 340ºF.
- Step 4
- After flattening the banana, put it straight into the mixed batter and well coated, then gently drop it into the hot oil. Deep fry until lightly brown. Then place it in the batter for re-coating one more time and put it back in the hot oil. Deep fry until golden brown colour.
- Step 5
- Place them on the cooling rack and serve immediately. Enjoy!
