Beef Soup or Soup Ko is a basic but tasty Khmer soup made of beef shank, beef bones for a flavourful broth, green papaya, and other ingredients. It’s delicious with rice or fried breadsticks.

Beef Soup or Soup Ko is a basic but tasty Khmer soup made of beef shank, beef bones for a flavourful broth, green papaya, and other ingredients. It's delicious with rice or fried breadsticks.

Method
- Using mortar and pestle to smash the garlic, shallot, galangal, and lemongrass.
- Cut onion in half, and cut daikon, green papaya and carrot into 2 inches long.
- Thinly slice sawtooth coriander, for topping.
- Cut the beef shank into 2 inches long.
- In a large port, bring the large amount of water to a boil, and add the beef bones and parboil for 10 minutes to remove any impurities. Rinse to clean and drain.
Cooking Beef Soup:
- Use a large pot and place it over medium heat, add olive oil, crushed garlic, shallot, galangal, lemongrass and kaffir lime leaves, stir until fragrant.
- Add the cut onion, stir. Continue to add sugar, fish sauce, salt, oyster sauce, chicken soup base mix, and stir to combine.
- Add beef shank, and stir about 2-3 minutes, then add the beef bones.
- Add water to cover the meat and start simmering until the beef tender.
- Skim off the foam.
- After 1 hour of simmering, take out the onion, garlic for having a clear broth. Then add 3 litres of boiling water, daikon, carrot, green papaya and continue to cook for 30 minutes.
- Add homemade beef meatballs to your liking, and cook for about 1-2 minutes and it's ready to serve.
- Top with fried garlic, sawtooth coriander, lime and sweet soybean paste sauce.
- Serve with rice, noodles, fried breadsticks, or just the soup alone.
