INGREDIENTS

- 2 cups Jasmine Rice
- 2 cups Water
- 2 cups Frozen Mixed Vegetables (peas, carrots, corn, long bean)
- 200g Chicken Breast
- 4 large Eggs
- 5 cloves Garlic, minced
- 1 large Onion, finely chopped
- 5 stalks Scallion (Green Onion)
- 4 tablespoons Olive Oil
- 3 tablespoons Soy Sauce
- 3 tablespoons Oyster Sauce
STEPS:
Rinse the Rice:
Place the rice in a fine-mesh sieve or colander and rinse it under cold running water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.
Drain the Rice:
After rinsing, drain the rice well and let it sit in the colander to remove excess water.
Bring water and rice to a boil
Here, we’re using a nonstick pan to cook the rice, but you may also use a rice cooker or a pot.
In a nonstick pan, add the drained rice in the pan, followed by 2 cups of water. Place the pan on the stovetop over medium-high heat and bring to a boil. Gently shake the pan to ensure the rice is evenly distributed in the pan. Cover the pan with a tight-fitting lid to trap the steam.

Cook and Simmer
Allow the rice to cook on medium-high heat until the water is absorbed and the rice is tender. Let the rice to simmer on low heat for about 10-15 minutes. After the suggested cooking time, check the rice by fluffing it with a fork and cover it back and continue to simmering it for another 5 – 10 minutes.
Check for Doneness
If it’s cooked to your desired tenderness, remove the pan from heat.
Let the rice sit, covered, for about 5-10 minutes. This allows the residual steam to further cook the rice and makes it fluffier.

- Smash the garlic and finely chop.
- Dice an onion and set aside.
- Slice the spring onion and separate the white and the green part.
- Crack eggs and beat, set aside.
- Cut the chicken breast into small, bite-sized cubes.
- Place a nonstick pan over medium-high heat, add half olive oil ( 2 tablespoons), and wait until it turns hot. Pour the beaten eggs into the pan, stirring gently, until scrambled but still slightly moist. Remove the egg from the pan and set aside.
- In the same pan, add the rest of olive oil.
- Add the minced garlic, stir until fragrant or gold colour, then add diced onion and the white part of sliced spring onion, sauté until the onions are translucent (do not let them brown).
- Add the chicken, stir until the chicken is no longer pink.
- Add soy sauce, oyster sauce, stir to combine.
- Add the mixed vegetables and cook until they’re tender but still slightly crisp.
- Stir in the cooked rice, breaking up any clumps and ensuring it’s well mixed with the other ingredients.
- Combine the scrambled eggs and mix well with the other ingredients.
- Cook for a few more minutes, stirring constantly, until the fried rice is heated through.
- Garnish with the green part of sliced green onions (scallions).
