Dried Fish Sour Soup

In less than 30 minutes, you can have this soup on the table. It's cooked with fresh veggies and herbs, a hard-boiled egg, and dried fish or fish jerky, which is a must-have component.

Ingredients
  

  • 1 dried fish (homemade)
  • 3 hard-boiled eggs
  • 1 cucumber
  • 1 large shallot
  • 1 large tomato
  • 1 handful cinnamon basil
  • 1-2 limes
  • 1 1/2 litres water
  • 1 tbsp fish sauce
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1/2 tsp chicken soup base mix (optional)

Method
 

  1. Let's prepare the vegetables by rinse them well with water and thinly slice the tomato, peel a green mango skin and shred using a shredder, peel the cucumber skin and thinly slice, cut lime in half, thinly slice a shallot.
  2. Cut the hard-boiled egg into 4 equal pieces.
  3. Break the dried fish into bite-sized pieces with your hands or any other utensils available.
  4. Once all the ingredients are prepared, put them all in a large soup bowl and let's prepare the broth.
Broth:
  1. In a medium pot, turn the heat to high and bring the water to a boil, add fish sauce, chicken soup base mix, salt, sugar, and bring to a boil.
  2. Once it's boiling, turn the heat off and pour directly into the prepared ingredients soup bowl. Serve with rice!
