Chicken Curry is made in one large pot with red curry paste, chicken, eggplant, long green beans, carrot, sweet potato, and coconut milk. This recipe is quick, simple, and delicious, and it’s perfect for breakfast, lunch, or dinner!

Cambodian chicken curry noodles are made from red curry paste which combines the lemongrass paste with dried red pepper paste that is soaked in water to soften it and finely chop. These two combinations create a beautiful curry paste.
Chicken is one of the preferred meat to cook this curry, but fish, beef, or even pork are good choices for making this dish.
This chicken curry is always prepared for special occasions in Cambodia, such as Khmer New Year, Pchum Ben, Wedding Ceremonies, and family gatherings.

The ingredient we needs for this recipe are: chicken, lemongrass paste, chili flakes paste, onion, carrot, sweet potato, eggplant, long green bean, shrimp paste, coconut milk, fish sauce, palm sugar, salt, chicken soup base mix, and water.

Lemongrass pastes: lemongrass, garlic, shallot, galangal, turmeric, kaffir lime leaves, and water. Blend all the ingredients in a food processor until fine.

Chili flakes paste combines hot boiling water and chili flakes.

- In a blender, add lemongrass, galangal, kaffir lime leaves, garlic, shallot, turmeric, and water, and blend until it becomes a paste.
- In a small mixing bowl, mix chili flakes and hot boiling together and stir until it becomes a paste.
- On medium-high heat, use a large pot, add coconut milk and chili flakes paste, and stir to combine until fragrant.
- Then add lemongrass paste and stir to combine until fragrant.
- Add shrimp paste, palm sugar, salt, chicken soup base mix, and fish sauce, and stir all the ingredients together.
- Add chicken and stir until it's no longer pink. Then add water and stir to combine, bring it to a boil, and cook for about 10-15 minutes or until the chicken is cooked.
- Start adding the vegetables, onion, carrot, and sweet potato, and stir to combine. Bring to a boil. Add eggplant, and long green bean, and stir to combine. Once it starts boiling, add coconut milk, and stir.
- Turn the heat off when it starts boiling and it's ready to serve.
- Serve with noodles and vegetables. Or with baguette (bread).
