The pickled chicken feet recipe is a sweet-sour and spicy street snack which quite popular in Cambodia. Fresh herbs, lemongrass, kaffir lime leaves, ginger, and lime juice, create a delectable flavour combination.

Cooking chicken feet: chicken feet, water, lemongrass, ginger, kaffir lime leaves.

Pickled chicken feet: cooked chicken feet, sugar, salt, water, chicken soup base mix, fish sauce, lime juice, chili peppers, garlic, lemongrass, kaffir lime leaves, ginger, sliced lime.

Method
- Thinly slice the vegetables: lemongrass, ginger, kaffir lime leaves.
- Chicken feet, chop off the tips of the claws and discard or cut in half or bite-sized pieces.
- In a large pot with the heat on high, bring water to a boil, then add the lemongrass, ginger, kaffir lime leaves and chicken feet. Cook for about 25 minutes.
- Then transfer into a large bowl of ice water mix with salt (optional) to stop the cooking process and to keep the skin white, wait for 5 minutes, drain well.
- Use mortar and pestle, or a blender to blend garlic and chilies then transfer into a mixing bowl.
- Add lime juice, fish sauce, sugar, chicken soup base mix (optional), salt, water, fresh sliced lemongrass, kaffir lime leaves, ginger, thinly sliced lime (optional), stir until well combine.
- Add the cooked chicken feet in the sauce bowl and stir to combine.
- Serve immediately or transfer into a glass container, and refrigerate for at least 1 hour for better flavour.
