Fried fish paste vegetables is a popular and tasty snack made by combining fish paste with veggies and served with a sweet fermented soybean dipping sauce, cucumber, and herbs.
Ingredients
Method
- First, wash the vegetables well and cut or slice into bite-sized pieces.
- Cut tilapia fillets into cubes.
- In a mixing bowl, combine tapioca starch, salt, sugar, chicken soup base mix, garlic powder, ground pepper, fish sauce, oyster sauce, ice water, stir then add the fish and mix well. Cover with plastic wrap, refrigerate 1 hour.
- Then blend the fish until smooth, it takes about 15 minutes (pause the food processor to avoid heating up the fish or add some ice cubes to keep the fish cool). Add green onion and continue to blend until smooth.
- Transfer the fish paste into a bowl, and start attaching the paste with all the vegetables.
Pan-frying:
- Turn the heat to medium, add olive oil and heat until the oil is hot. Then place the fish paste vegetables in and pan fry until golden brown.
- Transfer into plate with paper towel to extract the oil.
Serving:
- Serve with sweet soybean dipping sauce and vegetables such as cucumber, herbs.
