3 ingredients: snakehead fish, salt and chicken soup base mix (optional). If you like spicy food, just add crushed chili to your liking.



Dried Fish Rice Water Melon
Bai Trey Ngeat Ov Leok is a simple dish with just only 2-3 ingredients to make it.

- Cut the fish into Trey Ngeat form, then wash well with water and drain. Some, they are not washing the fish after cut. However I prefer to rinse it to remove the dirt and smell.
- Then rub the fish with salt, and it's optional to add the chicken soup base mix.
- For spicy flavour, just only add some crushed chili or more to your liking. And rub all the seasoning together and place them on a rack.
- For this method, we are using the oven to dry the fish. Traditionally, people dried the fish in the sun.
- Pre-heat the oven to 35ºC – 40ºC.
- Put the fish together with the rack into the oven and dry for a day or until completely dried.
- To serve, pan-fry with 2 tablespoons of olive oil and serve with rice and water melon.
