Yes, it’s possible to cook a wonderful fish stew in less than 20 minutes and only a few ingredients: snakehead fish (or any types of fish ), tomatoes, garlic cloves, salt, fish sauce, ground pepper, chicken soup base mix (optional), and water.

Let’s begin by melting the palm sugar until it starts to bubble, constantly stirring. Then begin adding the remaining ingredients, and voila!

- First, cut tomato wedges and set aside.
- Crush and mince the garlic.
- Cut the scallions about 1 inch long.
- Thinly slice 1 chili, it's optional.
- Fish, clean the fish well then remove the anal fin, dorsal fin and the scales on both sides, then cut into small pieces.
- In a large pot, caramelize the palm sugar with 5 tablespoons of water over medium heat. Once it starts bubbling, start stirring constantly. Add crushed garlic, star anise, salt, ground black pepper, fish sauce, chicken soup based mix, and continue stirring until it reaches a golden brown color ( be careful not to burn it, that will make the taste bitter if it burned ).
- Add in the fish and stir to combine. Then add 250ml water and gently stir. Add the tomato and cover, cook for about 10 minutes and it's ready!
- Serve with rice. Enjoy!
