Sticky Rice Dessert

Method
Glutinous Rice:
- Place the glutinous rice in a fine mesh sieve and rinse until the water runs clear. Then soak in the water for 3-4 hours, drain.
- In a large steamer, bring about 2 litres of water to a boil on medium-high heat, add the soaked glutinous rice, then spread it to make a thin layer for cooking evenly.
- Put pandan leaves on top, cover and steam for 30-45 minutes or until the rice is cooked.
Toasted Sesame Seeds:
- Place a frying pan over medium heat, toast 2-3 tablespoons of white sesame seeds until golden brown, then finely pound and set aside.
Sticky Rice Dessert:
- Use a large non-stick pan, turn the heat to medium, add palm sugar, salt, stir until it starts caramelizing, then add coconut milk, finely crushed toasted sesame seeds, steamed glutinous rice, stir until the milk has evaporated. Then transfer into a square glass container and press firmly, once completely firm, topping with toasted sesame seeds.
