Kola Noodles
A dish cooked by Kola family in Siem Reap inspired this Kola noodle recipe. It’s a lovely and tasty dish that may be served for breakfast, lunch, or dinner. It is made of rice noodles that have been stir-fried in soy sauce and served with pickled green papaya, crushed roasted peanuts, ground dried shrimp, sweet preserved radish, hard-boiled eggs, steamed pork roll, fried garlic, bean sprouts, and green onion (the green part), which mix with a dressing in a serving bowl. It’s both delicious and easy to prepare.

Preparing all of these ingredients, such as the sweet preserved radish and the steamed pork roll, takes the most time. These two are homemade and must be prepared a day in advance.

Method
- First, let's make pickled green papaya, carrot, cucumber Cut the cucumber into sticks and place in a bowl while preparing the next ingredient. Use a shredder to shred the green papaya, and carrot into a mixing bowl, then add salt and stir. Rest for 15 minutes.
- Rinse under tab water 3 – 4 times until the water runs clear, and drain. Squeeze out the excess water and place into a mixing bowl mix together with cucumber.
- Next, prepare the sauce mixture.Thinly slice the garlic, shallot, and chili pepper, put them in a measuring jar.Add sugar, vinegar, water, salt, chicken soup base mix (optional), and stir until dissolved.
- Pour the mixture into a mixing bowl of shredded green papaya, carrot and cucumber, then stir to combine.
- Wash the beansprouts with water and drain. Then cook in boiling water for 1 minute. Set aside.
- Thinly slice the green onion ( green part ) and put in a bowl, set aside.
- Slice the preserved sweet radish thinly and place in a bowl, set aside.
- Roast the peanuts, remove the skin when warm, and roughly pound, place in a bowl, set aside.
- Finely chop a whole bulb of garlic.
- Place a non-stick pan on medium heat, add oil and once the oil is hot, add the chopped garlic and fry until golden brown. Put together oil and fried garlic in a bowl. Set aside.
- We use a large bag of fresh noodles, but if you have dried noodles, soak them for 30 minutes in cool water before draining.
- There are 3 ways of how to cook the noodles:1. Steam: Bring 2 litres of water to a boil in a steamer over high heat, then reduce to medium. Steam for 5 to 10 minutes, or until the noodle is tender. Place on a serving platter. To make fragrant noodles, toss the steamed noodles with fried garlic oil to keep them from sticking together, then season with soy sauce for flavour and colour.2. Cook in boiling water: Bring 2 litres of water to a boil over medium-high heat, then drop the appropriate amount of noodles into the boiling water with a big skimmer slotted spoon and cook for 30 seconds. Drain and combine with fried garlic oil and soy sauce in a mixing dish.3. Pan-fry: place a nonstick pan over medium heat and add the fried garlic with the oil, noodles, and stir-fry for 2-3 minutes. Add the soy sauce and swirl to incorporate. Transfer into a serving dish.

- NOTE: By omitting the dried shrimp and steamed pork roll, you may make this dish vegetarian.
- Soak the dried shrimp in water for 30 minutes, then rinse well until the water runs clear, drain. Then toast the shrimp over medium heat until dried or the water has evaporated. Put the toasted shrimp into a grinder, and grind thoroughly. Transfer into a bowl, set aside.
- Boil 5 eggs to the way you like, here we use hard boiled egg. Then cut into 4 equal pieces. Set aside.
- Pan-fry the steamed pork roll until golden brown, then slice into bite-sized pieces.
- Place everything on a large platter in the following order: noodles first, then beansprouts, sliced steamed pork roll, egg, pickled, sweet radish, ground dried shrimp, roasted peanuts, fresh green onion, and, most importantly, spoon the pickled vegetable juice over the noodles as a dressing.
- Before eating, thoroughly combine all of the ingredients. Enjoy!
