In Cambodia, shaved ice known as Teuk Kork Chus (ទឹកកកឈូស), is usually served during the hot summer days. Tuk (ទឹក) translates to water, Kak (កក) translates to ice; and Chhous (ឈូស) translates to shaved. This dessert is served with a variety of fillings such as steamed red bean, mung bean, grass jelly, sugar palm fruit, syrup, coconut palm sugar syrup, and more.


Coconut palm sugar syrup: water, palm sugar, shredded coconut, salt, coconut (optional).

Shaved Ice: red bean, mung bean, chia seeds, sugar palm fruit, grass jelly, condensed milk, strawberry syrup, and coconut palm sugar syrup.

- In a sauce pan, on medium high heat bring 500 millilitres of water to a boil. Add palm sugar, salt, shredded coconut, stir and turn the heat off. Set aside.
- Clean the red bean and mung bean and drain well.
- Cook the beans on medium heat until the water has evaporated, if the beans still not cooked, keep adding water (careful to not burn the bottom) until they are completely cooked and soft. Set aside.
- In a small bow, combine the chia seeds and hot water and stir well. Set aside.
- Cut the grass jelly into small cubes.
- Rinse the sugar palm fruit well with running water. Set aside.
- Shave or crush the ice using ice shaver machine or blender.
- Then start assembling the shaved ice glass by adding: red bean, mung bean, grass jelly, sugar palm fruit, chia seeds, shaved ice, strawberry syrup, coconut palm sugar syrup, condensed milk.
