In many countries, cellophane noodles, often known as glass noodles, are well-liked in many dishes. Glass noodle soup, also known as Missouri soup, is one of Cambodia’s all-time favorite dishes. It’s made with ground chicken or pork, dried shrimp, tofu skin, dried wood ear mushrooms, banana flowers, onion, scallion, coriander, garlic, water, olive oil, oyster sauce, soy sauce, fish sauce, sugar, salt, ground black pepper, and chicken soup base mix.

Ingredients: ground chicken, water, olive oil, oyster sauce, soy sauce, fish sauce, sugar, salt, ground black pepper, and chicken soup base mix.

Thinly slice onion, cut green onion into 1/2 inch long, and cut coriander into 1 inch long.

Soak banana flower in water and tie, soak tofu skin in water and cut into 1 inch long, and soak dried wood ear mushroom in water and drain well.

Soak dried glass noodles, soak dried shrimp and drain well. Finely mince the garlic.

- Green onion: cut into 1/2 inch long. Separate the white and green parts.
- Onion: thinly slice.
- Coriander: cut into 2 inches long.
- Dried banana Flower: soak in water for 30 minutes, and rinse well then tie.
- Garlic: finely mince the garlic.
- Dried wood ear mushroom: soak in water for 30 minutes, rinse and drain well.
- Dried tofu skin: soak in water for 30 minutes, rinse well and cut into 1 inch long.
- Glass noodles: soak in water for 30 minutes and drain well.
- Dried shrimp: soak in water for 30 minutes and rinse well under tab water.
- In a large pot over medium heat, add olive oil and minced garlic, stir until fragrant. Then add ground chicken, stir.
- Add oyster sauce, soy sauce, fish sauce, sugar, chicken soup base mix, ground black pepper, salt, stir to combine.
- Add soaked dried shrimp, wood ear mushroom, banana flower, tofu skin, green onion (white part), glass noodles, stir to combine.
- Then add water, stir and bring to a boil. Skim off the foam to make clear broth.
- Once it's boiling, add thinly sliced onion and green onion (green part), then stir to combine. When it starts boiling, turn the heat off and it's ready to serve.
